Richard Blais' Flip is finally opening!

I've long awaited the opening of Richard Blais' molecular gastronomy take on a burger joint. Daily Candy said it was opening tonight, but I just got the scoop that it is not, it's a few days away, so I'll update when I know more. Still check out the delish sounding menu below!

Some menu teasers from his blog:

BUTCHER + CARAMELIZED ONION + BLUE CHEESE + RED WINE JAM 8

COUNTRY FRIED + PIMENTO CHEESE + PICKLED OKRA 7

DELUXE + FOIE GRAS + WAGYU BEEF + SHAVED TRUFFLE 24

BREAKFAST + PORK SAUSAGE + FRIED EGG + MAPLE 7

PATE MELT + VIETNAMESE SALAD + JALAPENO + SMOKED MAYONNAISE 8

ROOTBEER + SPICED RUM ICE CREAM + TAMARIND

Is it just me or does all of that sound delicious? And the prices look remarkably reasonable, too. I hear there are lamb burgers, veal and pork pate melts, and vodka battered onion rings, too. It just gets better and better.

I'll be checking this out ASAP! Hopefully for once Blais will find an appreciative and adventurous enough audience to let him really flex his creative muscles while still making enough money to stay afloat!
